Canada Day Strawberries-and-Cream Cake

A light vanilla cake layered with whipped cream and fresh strawberries. Soft texture, easy to eat, and very fitting for a Canada Day dessert table.

Making the Cake

Preperation

Preheat oven to 350°F. Grease and line two 8-inch round cake pans.

Dry Ingredients

In a bowl, whisk flour, baking powder, and salt.

Wet Ingredients

In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.

Mix Wet and Dry Ingredients

Alternate adding dry ingredients and milk until combined.

Prepare to bake

Divide batter evenly between pans.

Finish

Bake for 28-32 minutes, or until a toothpick comes out clean. Cool completely.

Making the Cream Filling

Whip the cream

Beat whipping cream, icing sugar, and vanilla until medium peaks form.

Tip: Do not overwhip or it becomes grainy.

Make It

Layer One

Place first cake layer on plate. Spread a thick layer of whipped cream. Add sliced strawberries evenly.

Layer Two

Top with second cake layer. Cover top with remaining whipped cream and decorate with additional strawberries.

Storage: Refrigerate for at least 1 hour before serving. Best eaten within 24 hours.
